Spring Into Freshness!

Plant sproutThis week is the first week of Spring, but it sure didn’t feel like it.  This winter seemed particularly long as the temperature is still hovering between 5 and 0 degrees Celsius.  I am hoping with some spring vegetables in your dinner, it will chase away the winter blues until the real Spring arrives.

International Women’s Day

International Women's Day

I used to think being a woman was a cursed.  You are not being treated equally nor given the same respect as men.  Especially in Asia; being a man gives you a leg up in everything.  I remembered when I visited Cambodia while I was 6 months pregnant.  People would ask me if I knew the gender.  Once I told them that I was having a girl, their reaction was: “Don’t worry!  There’s always a next time!”  The other incident was when we finally moved to Cambodia for business two plus years ago.  My husband and I were looking for housing.  Because I spoke the language, I took the lead in negotiating the rent.  The landlord (he was a man) didn’t make eye contact with me and insisted me to translate everything to my husband because he rather deal with a man.  Only after 10 minutes of me insisting that I was the decision maker, he would take me more seriously.

Today is international women’s day!  I just want to let all the women know that you are beautiful, unique and irreplaceable.  Being a woman myself, I know how hard it is to be a woman; you have to worry about work, home, the way you look and remember everything! I know everyone in my household rely heavily on where everything is around the house.  The question is how do women keep it all together?!  My secret is my husband!  Not only that he’s supportive, understanding, loving and caring.  He’s always given me the Triple A’s (Appreciation, Acknowledgement and Affection) any women could ask for.  Because of him, I now embraced being a woman.  I feel important and valued!  I am lucky to have him in my life.  With a strong foundation in our marriage, I can go out there to make a difference in this world!  Thanks dear for being you!

This dish reminds me of the Korean tofu soup.  You can pair it with rice or just eat it by itself.  Leftovers are perfect for lunch.

When I make this, I made 50 spring rolls because that’s how much a pack of spring roll wrappers yield.  I freeze half and safe it for days when I need quick dinners or lunches.

MOMpreneur Conference

This weekend is the very 1st Annual MOMpreneur Conference & Awards Gala!  I am so proud to be part of it as I just became a new MOMpreneur.  I just want to congratulate the top 10 nominees and wish them the very best of luck!  No matter who wins, I think all MOMpreneurs are winners!  I am super excited to attend the conference and meet all these wonderful women.  I know I have so much to learn from them on how they balance their life between their business and family!  Stay tune for my after thoughts!

Positive Thinking!

March I can’t believe we are entering March already!  Time seems to just fly; Spring will be around the corner before we know it!  I love Spring because the weather just gets better as it gets warmer.  All the plants and flowers will start to bud which signifies hope and life.    Where there is hope, there’s happiness!  When I feel happy, I am much more productive and so much more get done!

Positive thinking is such a powerful thing; it gives us strength to deal with all our problems.  I used to think why do bad things happen to me and why can’t my life be as good as my friends etc…  Then I saw a quote: “The happiest people don’t have the best of everything, they make the best of everything.”  I realized that no one has the best of everything.  We just have to make the best of what we got.  Then my attitude changed and all my problems seemed so much easier to deal with.  From then on, I try to remind myself to think positively no matter how bad the situation is.  It is just a phase and it will pass!

For this week, I’ve incorporated some Spring vegetables to get our spirits up.  Here’s the weekly shopping list and meal plans:

Monday is the day we want something very simple.  This Potato leek soup will give you just that.  You can always add bacon bits if you are a bacon lover.

I love the warm brown rice salad because it is really tasty and easy to prepare.  The pork chop can also be prepared in advance so when it comes time for dinner, you just have to sear and pop it in the oven.

Slow Cook Pork Ribs with Chinese Baby Broccoli

I made this meal when I have no time to cook dinner.  Before I leave for work, I just cook the rice in the rice cooker and pork ribs in the slow cooker.  Then when I come home from work, everything is done, all I have to do is stir-fry the broccoli which is less than 10 minutes.

My husband’s favourite pasta is carbonara!  So I made this and he ate two bowl in one sitting.  For a guy who doesn’t like carbohydrates, it is a lot of pasta.  Glee loved it too and I am sure this meal will have your family wanting seconds.
