International Women's Day

I used to think being a woman was a cursed.  You are not being treated equally nor given the same respect as men.  Especially in Asia; being a man gives you a leg up in everything.  I remembered when I visited Cambodia while I was 6 months pregnant.  People would ask me if I knew the gender.  Once I told them that I was having a girl, their reaction was: “Don’t worry!  There’s always a next time!”  The other incident was when we finally moved to Cambodia for business two plus years ago.  My husband and I were looking for housing.  Because I spoke the language, I took the lead in negotiating the rent.  The landlord (he was a man) didn’t make eye contact with me and insisted me to translate everything to my husband because he rather deal with a man.  Only after 10 minutes of me insisting that I was the decision maker, he would take me more seriously.

Today is international women’s day!  I just want to let all the women know that you are beautiful, unique and irreplaceable.  Being a woman myself, I know how hard it is to be a woman; you have to worry about work, home, the way you look and remember everything! I know everyone in my household rely heavily on where everything is around the house.  The question is how do women keep it all together?!  My secret is my husband!  Not only that he’s supportive, understanding, loving and caring.  He’s always given me the Triple A’s (Appreciation, Acknowledgement and Affection) any women could ask for.  Because of him, I now embraced being a woman.  I feel important and valued!  I am lucky to have him in my life.  With a strong foundation in our marriage, I can go out there to make a difference in this world!  Thanks dear for being you!

If you are not a seafood fan, you can do any topping really for this dish.  The rice is so creamy and healthy for you that you can afford to have anything you want.

Seafood Tofu Soup

This dish reminds me of the Korean tofu soup.  You can pair it with rice or just eat it by itself.  Leftovers are perfect for lunch.

Baked Spring Roll Vermicelli

When I make this, I made 50 spring rolls because that’s how much a pack of spring roll wrappers yield.  I freeze half and safe it for days when I need quick dinners or lunches.
